A Mozzarella Pilgrimage To Mondragone

Gourmands will go on culinary pilgrimages to savor delicacies that can be tasted nowhere else in the world. They will travel to Austria in the Waldviertel poppy season, to France during the rains for escargot and to Thailand when the live frogs are fat and juicy. Connoisseurs of Mozzarella di Bufala will also make a pilgrimage but in this case to a rather nondescript coastal town about 50 miles north of Naples which over the decades has become world renowned as the Capital of Mozzarella: Mondragone. Were it not for the incredible delectables available in Mondragone and nowhere else in the world, it might be a town to not bother visiting. It has a rather nondescript historical center and most of the town is located "strip mall" fashion along the Domiziana highway which hugs the coastline of northern Campania province. If you're seeking magnificent frescos adorning the ceilings of grand cathedrals, you are in the wrong corner of Italy. However, if you are drooling for the phenomenally scrumptious white fist-sized spheres dripping with almost clear Bufala milk, you have just arrived at the highest possible altar of Mozzarella worship. Mozzarella di Bufala is nothing at all like the white, waxy, brick sticks coated in thick transparent plastic found at the local supermarkets, as this Mozzarella is fresh, spongy, moist and has a completely incomparable taste.
The area around Mondragone for many miles is little more than swampland, and it turns out that it is the perfect type of terrain to raise Bufala, which is not a buffalo or bison at all, but is actually a yak. These yak love to splash around in muddy fields and graze on the local vegetation and the milk that they give is unparalleled in its ability to be turned into the finest imaginable mozzarella in the many local Caseifici, or mozzarella factories.
The time honored process of turning fresh Bufala milk into Mozzarella finds its highest expression in the Caseifici of the Mondragone area in a fortuitous geographical confluence where all the elements are present for the creation of a superlative product.
